Recipe: Plum Kuchen Ethnicity: German

Source/History: I am submitting this second hand and have never made it. I
can't even remember the name of the plums, but they are a
special variety grown only in a small area in Germany where
the German grandmother lives.

Recipe: JOE'S JAMBALAYA Ethnicity: Cajun/Creole

Source/History: This recipe was given to me by Chef Joe Cahn, owner-
operator of the New Orleans school of cooking in 1983, and
it is still the best one out there among the myriad of
jambalaya recipes I have tried and tested. I've added a
couple of ingredients over the years, but it is still
basically the same! Joe is now the commissioner of
tailgating and he'll be coming to a city near you this
fall when football season kicks off! - The Colonel

Recipe: Egyptian Beef and Rice Ethnicity: Egyptian

Source/History: An Egyptian/American woman taught this recipe to me while
we were both living in Saudi Arabia where our husbands
were working for Westinghouse. Recipe looks harder than it
is! Serves 8-10.

Recipe: Palestinian Breakfast Ethnicity: Palestinian

Source/History: Iyad served this to us for breakfast with warm pita,
cucumber spears, and tomato and sweet onion wedges, but in
less than a week home I can attest it makes a darn good
lunch and appetizer. Serves 4.

Recipe: Stewed Okra & Tomatoes Ethnicity: Southern

Source/History: Stewing okra with onion and tomatoes is absolutely
traditional all through the South. Small amounts of meat
are often added for seasoning. Add corn to this, too, if
you like, and serve it over rice, hot cornbread or grits.
Yield: 6 servings, 3/4 cup each

Recipe: Commander's Krewe Jambalaya Ethnicity: Cajun/Creole

Source/History: Most jambalayas have seafood in them. This one doesn't,
rather lots of chicken, beef, pork and sausage. And
garlic - don't worry, for this large batch, a whole head
is just enough to give it flavor. The preparation is the
same, though, as for other jambalayas. In other words,
don't stir it very often, just enough to keep the rice
from sticking. This is a complete meal and a great party
dish. The recipe makes a large quantity - we don’t know
how to make a small batch. Yield: 8 large servings

Recipe: Frijoles Blancos con Cerdo (White Beans with Pork) Ethnicity: Columbian

Source/History: Though I’ve been complaining about the cold and rain this
spring, I have to admit, sometimes I am kind of thrilled
to still be able to wear my jackets and boots and cook my
delicious and comforting Colombian food. These little
things help me to enjoy this unexpected and nasty weather
that we’ve been having this May. Beans are an important
Colombian food and we have many recipes using all types of
beans. Frijoles Blancos con Cerdo y Tocineta is one of
those recipes. Enjoy it!
