Recipe: Peri Peri African Chicken Ethnicity: African Regional

Source/History: This is a great spicy marinade recipe, a traditional
African dish, great for BBQ. Nice with salad and fries,
but I like adding it to a pita with salad and garlic Greek
yogurt (3/4 cup Greek yogurt and 3 cloves of crushed
garlic with finely chopped chives). Don't go on a date
though, gives you wicked garlic breath! Yield: 4 servings.

Recipe: Teriyaki Marinated Chicken Ethnicity: Japanese

Source/History: "I searched for a long time to find a teriyaki marinade
with a flavor as good as what you find in some restaurants,
with the right amount of sweet and salty. Finally I made up
my own recipe where the flavor increases the longer you
marinate. Also works well with pork chops or beef steaks."
Original recipe yield: 4 servings.

Recipe: Terri's Veal Marsala Ethnicity: Italian

Source/History: "The Marsala sauce, when made with DRY Marsala wine, is
not too sweet. This recipe can be used with veal, pork or
chicken. I prepare this dish on a regular basis as it is
quick, simple and delicious. This recipe can be made ahead
of time. Simply reduce the amount of time to 5 minutes
that the meat is simmered in step 4 to 5 minutes. Place
meat in a covered casserole dish, finish off sauce
according to directions above, pour sauce over meat and
refrigerate. Reheat the dish in either an oven preheated
to 350 degrees F (175 degrees C) for 15 minutes OR simmer
in a pan on top of the stove just until hot." Yield: 4
servings.
